This post is going to be a quick one – it’s after midnight. We slept in today after staying up late last night, and woke up to fix a quick lunch. I went for a proteiny quesadilla – yum!
This was stuffed with chicken and cheddar, and cooked until crisp. I ate it with the last of my salsa and a dollop of yogurt for dipping. It was perfect fuel for a round of basketball not long after we finished eating. We are LOVING this warm weather – it’s lovely!
I ran some errands this afternoon, checking out a big pile of books from the library. I have been on a Laurell K. Hamilton kick lately and was eager to check out some more books by her. I made a stop by Target on the way home and was happy to find a new pair of black flats – they’re adorable and soo comfortable.
I had dinner simmering away in the crock pot all day today, and when it was ready, I only had to prepare a few side dishes before plating everything up.
I made a big roast with carrots and onions, with a side of brussels and broc and some homemade french fries. Everything on my plate was full of flavor, and the roasted brussels just melted –they were so tender! It was a satisfying and homey meal, and we have lots of leftovers for lunch tomorrow. I love turning leftover roast into shredded beef sandwiches with barbeque sauce, it’s an easy way to get a few meals out of one dish.
After dinner, we played with the cats for a while, tuckering everyone out. Once we finished up several round of Magic, we cuddled with the cats for a while, and now I think we’re headed up to bed. I have an announcement of sorts to make tomorrow (really, later today), but for now, I’m headed to bed. G’night!
