Since this is a dinner post, I thought that I would start out by talking about breakfast. No, really. You see, I was having some blood work done this morning and because of that, had to fast until after that was completed. That meant no food from midnight until just after 10 this morning. I know, right? I am such a breakfast person that by the time 10 rolled around, I was ready for food, and fortunately, I had the foresight to pick up a very tasty breakfast.
I got a multi grain bagel from Panera, and smeared it with veggie cream cheese, having a small fruit cup alongside my morning meal to feed the growling beast that had taken up residence in my tummy.
Now onto dinner – today was a super busy day that flew by, and before I knew it, I was headed home. While I was on the road, The Boy was getting chicken and rice prepped to roll up into enchiladas, which I assembled and baked when I got home.
The enchiladas were filled with rice, cheese, chicken and enchilada sauce, wrapped in corn tortillas, and topped with more cheese and enchilada sauce, and they were delicious. The chicken was perfectly cooked, and all of the textures and flavors came together to make a delicious meal.
After dinner, I played the role of Suzy Homemaker and roasted some brussels sprouts while mixing together pumpkin pie filling, which I then baked in mini graham cracker pie crusts to make a collection of mini pies, filling the house with the sweet aroma of cooking pumpkin pie.
Now, we’re watching Family Guy and getting ready for bed. I was able to make it to the gym this evening for a workout, and am ready to curl up with The Boy and Enzo and get some rest. I hope you all had a great Tuesday!
