Today I noticed the weather starting to cool down, but it’s still not feeling like November. I am savoring every moment of this extended summer that I can get, walking on my lunch to enjoy the sunshine and making an effort to appreciate every drop of warm weather we get this November, because I am not sure how long it will last. As eager as I am to join up with Angela for Project Snow, I like my warm weather.
You would think that with the warm weather we have been experiencing that I would be wanting warmer weather foods. Surprisingly, that has not been the case, and I’ve found that when I’m talking with The Boy about dinner options, they’ve all been hearty, cold-weather fare. Tonight seemed to be the exception to that, when I found myself craving roast beef au jus, but not having roast beef, ended up fixing a batch of sloppy joe instead, with The Boy and I once again tag-teaming dinner.
I ate my sloppy joe on whole wheat bread with side of macaroni and cheese and edamame.
It was a quick and filling dinner. I ended up mixing some of my crunchy edamame into the macaroni – it was yummy! Of course, after dinner, I had to dig into a mini-pie that I topped with some fluffy whipped topping. I love these little guys, they’re so tasty and perfectly portioned!
These were pretty easy to prepare – I followed the direction on the back of the plain can of Kroger-brand pumpkin that I picked up to make one large pie. Instead of scooping the pie filling into a large crust, I scooped it into mini graham cracker crusts before sliding the pies into the oven to bake. They took about half the time to bake as a large pie, and I’ll post a how-to after fixing them a second time – just to get the baking time correct.
After we finished eating, I played with the cats for a little while before sitting down to have a conversation with one of my best friends. We talked about boys, relationships, and what’s been going on in each other’s lives before she had to go, and The Boy and I settled in to watch a little TV. Now, we’re playing with Enzo and relaxing before bed.
