This morning was a gym morning, and before I set out, I had a first breakfast, smearing a piece of whole wheat bread with some chunky almond butter – to fuel me through my workout.
This served as fuel for the workout, and for clearing the frost that accumulated on the car overnight – it was chilly out this morning!
Once I made it to the gym I pushed myself hard through an elliptical trainer workout, leaving the gym feeling warm and accomplished. So warm, in fact, that I had the air conditioning on! I arrived home famished, and whipped up a quick and easy, protein packed second breakfast.
I made a yogurt and fruit bowl, with a vanilla greek yogurt topped with pomegranate seeds for crunch.
It was super delicious, with the tart pom seeds complimenting the sweet and tangy yogurt quite well – this was a refreshing post-workout breakfast, and made for a great start to the day.
