Today was frigid! I was so glad that I packed soup for lunch, and that soup was on tonight’s dinner menu. As I’ve probably said before, I love soup for dinner on cold, blustery days – it’s so warming!
Tonight’s soup was a classic for me: potato!
This soup is simple and quick to make, but comes out delicious every time. I like mine topped with a little extra cheddar and turkey bacon crumbles.
Sooooo good! I enjoyed every bite, and sopped up the leftover soup in my bowl with a hot buttered roll. I am so glad that we have leftovers – my recipe makes A LOT of soup!
After my filling and warming meal, I snuggled on the sofa with Enzo for a little while. I was freezing, so we were both wrapped up in a fleecy blanket. Eventually I decided to relax in a hot bath for a little while, to get ready for bed. I was sore from my workout last night and a soak sounded like just the thing for my muscles, and the perfect way to unwind before bed.
This is probably going to sound random, but I was thinking about adding a recipes tab to post some of the foods I make on a regular basis – like chicken and noodles, this soup. What do you guys think?
