I’ve been on an overnight oats kick recently – I just can’t get enough of them. This is a big change from when I didn’t really think they were that great! I like them for their ease and versatility. Like regular oats, the topping options seem endless, from banana and almond butter, to apple cinnamon, to chocolate chips and graham crackers. I love that I can change up my overnight oats by changing the type of yogurt I use – from Greek to regular, plain to flavored, and it all tastes amazing.
Having breakfast ready when I roll out of bed is always a plus. It’s nice to know that I have a container of oats ready and waiting for toppings in the fridge, and today was no exception.
This batch of oats was whipped up last night with 1/2 cup of plain Greek yogurt, 1/3 cup of milk, maple syrup, and 1/2 cup of oats. After sitting overnight it was thick and doughy and delicious – but needed toppings.
I kept my toppings simple today – a spoonful of almond butter, a sliced banana, a sprinkle of GoLean for some crunch. I dove right into my container and ate up! It was delicious and helped fill my belly and wake me up. The maple syrup added a subtle sweetness to the mixture, and I enjoyed every bite.
It’s time for me to get ready and to fish some cat toys out from under our fridge. Have a great Thursday everyone!
