It has been a busy couple of days! Last night I went out with a friend and didn’t end up getting home until it was almost our bedtime. After unwinding for a little while, The Boy and I were both ready to crawl under the covers, where I was asleep as soon as my head hit the pillow.
This morning, I woke up excited for a hot breakfast, and whipped up a creamy, hot bowl of oats while I got ready for the day.
In today’s mix:
1/3 cup oats
2/3 cup almond milk
1/3 cup water
1 banana
I topped my extra-creamy bowl of breakfast with a blob of almond butter and granola – it was really delicious. I’m loving the almond milk – it has a mild almond flavor and is so creamy! This bowl kept me full through most of my morning, and is definitely one to keep. I’ve been using more liquid in my oats to make them creamier and a little thinner – they’re so good when they’re extra-creamy.
I’m still amazed by how light it is in the evenings now, and how much it’s starting to warm up. It’s really starting to look and feel like spring, and I’m still shocked to hear birds chirping when I step outside first thing. I think I’m still getting used to it being March – it seems like it was just December!
Dinner tonight was a quick Mexican-inspired meal. We fixed quesadillas in our big skillet, stuffing them with all sorts of yummy fillings.
I chose to fill mine with black beans and cheddar, cooking it until the outside was crisp and the cheese gooey. I ate mine with a hefty serving of salsa-about a half cup, and plain yogurt for dipping. It really hit the spot, and I loved the various textures and flavors – especially the spicy salsa combined with the hot and mild quesadilla – yum!
We spent the remainder of our evening straightening up around the house and playing with the cats. Some TV was watched and tea was made to unwind before bed. It’s been a nice, relaxing evening, and I’m ready to hit the hay. I hope you had a great day!
