Today was one of those warm and gray early spring days. It was lovely, warm, and though it was gray and rainy, it wasn’t gloomy. It was warm enough to walk outside in a light jacket and not be cold, and I’ve seen signs of early life budding and peeking out of the ground – spring is suddenly moving in, and I’ve missed the greenery!
The spring-like weather called for a springy breakfast. I knew I wanted something cold, and went with one of my favorite spring-time breakfasts: yogurt!
In my bowl I layered together sliced banana, Kashi Autumn Wheat, yogurt, walnuts, and coconut. I loved the various flavors and textures in my breakfast this morning – it definitely tasted like spring!
My day was definitely filled with anticipation. We had thunderstorms in the forecast, and as The Boy pointed out to me this evening, the first thunderstorm of the year means winter is about over. I was excited for the thunder, lightning, and hard rain of a storm. It was a slow-moving storm, and didn’t arrive until near dark, when we heard the distant rumbles of thunder. I drove home with rain drumming on my car and lightning illuminating the world in flashes of blue light.
When I got home, I was hungry, and knew that I wanted something that would be quick and easy to put together. We ended up going with our favorite standby: quesadillas!
We fixed these with chicken, cheese, and black beans. I ate my triangles with lots of salsa and some plain yogurt for dipping, and we shared some warm tortilla chips for some extra crunch. It was a simple and filling meal.
Once we finished eating and cleared away the dishes, we sat down for some Little Big Planet time. This has quickly become one of our favorite games to play together. It’s both challenging and cute, and I love that the levels are becoming progressively harder as we move through the game. We played for an hour, laughing and ribbing each other through some difficult and new levels of the game.
Now, we’re wrapping up the night with some ice cream and basketball. It’s been a lovely day and I’m excited to see what the weekend brings. Have a great night everyone!
